Magloubah is a delicious dish that comes from very ancient roots and is quite popular in the Levantine countries. Magloubah literally translates as upside down.
This delicious dish consists of eggplants, cauliflower, bell pepper, tomatoes, onions, lamb or chicken, spices, and rice. The ingredients are all slow cooked in one pot – arranged in layers facing down. Once the aromas has emerged, a large serving plate is placed over, pressing it tightly against the pot, and then flipping it back facing up. Sprinkle with pine nuts, parsley and enjoy!
