Freshly grated, I perfume a wide variety of dishes, whether savory or sweet: from meatsand cold cuts, to soups, bechamels, gratins and vegetables. I also season your cocktails and desserts like apples, quince, pears, and all the fruits of autumn and winter. In fact, I get all dressed up on Christmas to perfume gingerbread, truffles, cakes, and other pastries and sweets of the cold season. I make part of many spice mixtures like curry or ras el hanout. I act on the whole digestive system, thanks to my stimulating and carminative properties.
